well anon, I started by reading the manga which you can find all of archived here, but it is kinda daunting cause there’s a lot and it’s been running for a long time.  I would suggest maybe starting the 2012 anime first then (there’s not dub for this yet, so you can find it online subbed), and after maybe watching season 1, starting on the manga from part 1.  Mostly I say this cause part 1, phantom blood, is a favorite of mine.  

Season 2 of the anime is in part 3 right now, and is currently airing on fridays.  Part 3 was already animated once in 1993, at least the last part of part 3 was animated in ‘93, and the first part was animated in 2001 so it’s a bit odd.  But the OVAs are fun and once you’ve read part 3 I’d totally say go ahead and watch them.
